Equipment

  • Measuring cups
  • Measuring spoons
  • Spoon for stirring
  • Electric mixer
  • Knife for cutting butter
  • Parchment paper
  • Rimmed baking sheet
  • Oven
  • Timer
  • Ruler
  • Cooling rack
  • Pot holders

Ingredients

  • 2 tablespoons vegan stick butter
  • ½ cup granulated sugar
  • ½ cup whole wheat flour* see tips
  • ½ cup all-purpose flour* see tips
  • ¼ teaspoon salt
  • 3 tablespoons non-dairy milk
  • 1 teaspoon vanilla extract
  • ½ cup dairy-free chocolate chips

Instructions

  • Cut butter into small pieces and place in a mixing bowl. Let it stand at room temperature for 5-10 minutes to soften while you gather the rest of the ingredients.
  • Heat oven to 350°F. Line a baking sheet with parchment paper.
  • Add sugar to the mixing bowl.
  • Use an electric mixer to beat on low until thoroughly mixed.
  • Add flour and salt. Beat until mixed.
  • Add milk and vanilla and beat until mixed.
  • Use a spoon to stir in chocolate chips.
  • Form the dough into a ball with your hands. Let stand for 5 minutes.
  • Place on the center of the parchment paper on the baking sheet. Press evenly into an 8-inch circle.
  • Bake for 8 minutes. Rotate the pan.
  • Bake for another 7-9 minutes, until the edges just begin to brown.
  • Remove from the oven and place on a cooling rack.
  • Let the cookie cool completely while you wash the dishes and clean up the kitchen.
  • Wrap the cookie in plastic wrap and give it away.

Notes

Variations:
  • Gluten-Free: Substitute gluten-free oat flour for whole wheat flour and gluten-free flour blend for all-purpose flour.
  • Nuts: Add ½ cup chopped walnuts or pecans.
  • Carob Chip Cookies: Substitute carob chips for chocolate chips.

Tips:
  • Too much flour makes a crumbly cookie. Measure the flour by spooning it into the measuring cup and then leveling it off. Don’t pack it or shake it.
  • If the dough is too dry to form into a ball, add 1 teaspoon of milk at a time.
  • The cookie will look underdone when it comes out of the oven.
