Treasure Hunt Energy Bites

This recipe originally appeared in the March 12, 2022 issue of Guide magazine, which is a publication for children ages 10-14. It is the first in a series of 28 monthly installments called “Belief Bakery”, which uses a hands-on cooking project to illustrate each of the 28 fundamental beliefs of Seventh-day Adventists. We emphasize the love of God and Biblical truths and tie them into a fun cooking project with healthy plant-based recipes.

God’s Treasure Chest

Belief #1: The Holy Scriptures.

To help you get started on your spiritual treasure hunt, look up the clues in your Bible to make this recipe. Your reward will be sweet.

Before you begin:

  1. Look up the Bible verses to discover what ingredients you need. Write the ingredients on the blanks in the recipe. Note: many translations use a different word. Use the NIV version. 
  2. Read through the recipe, variations, and tips.
  3. Choose if you want to make the main recipe or a variation. 
  4. Arrange to buy any ingredients that you need.

Steps to get ready to cook:

  1. Wash your hands with soap and water.
  2. Gather the equipment.
  3. Gather the ingredients and measure them.

Treasure Hunt Energy Bites

Most of the ingredients in this recipe are mentioned in the Bible. Go on a treasure hunt in your Bible and find out what they are. When you are done making these energy bites, you’ll have a simple sweet treat that tastes a lot like Lara Bars.

Equipment

  • Measuring cups
  • Measuring spoons
  • Food processor or blender
  • Rubber spatula
  • Table knife
  • Plate for serving

Ingredients

  • ½ cup shredded coconut
  • ½ cup _ _ _ _ _ _ _ Numbers 17:8
  • 1 cup pitted _ _ _ _ _ 2 Samuel 6:19, NIV Hint: fruit that starts with D
  • ½ cup _ _ _ _ _ _ _ 1 Samuel 25:18 Hint: fruit that starts with R
  • 1-2 teaspoons water if needed
  • 2 tablespoons shredded coconut for rolling

Instructions

  • Put the first four ingredients in a food processor or blender.
  • Put the lid on and process until the mixture is finely ground.
  • If the mixture is not moist enough to form into balls, add 1 teaspoon water. Process until mixed. If needed, add 1 more teaspoon water.
  • Transfer the mixture to the counter. Use the rubber spatula to scrape out the food processor or blender.
  • Gather the mixture into one ball with your hands.
  • Flatten it and shape it until it is 5-inches square and about ½-inch thick.
  • Use a table knife to cut into 25 1-inch pieces.
  • Roll each piece into a ball.
  • Put 2 tablespoons shredded coconut in a small bowl. Roll each ball in coconut.
  • Place the balls on a plate and serve.
  • To store: Place the balls in a single layer in a flat container. Cover with a lid. Refrigerate up to 1 month or freeze up to 3 months.
  • Remember to wash the dishes and clean up after yourself.

Notes

Variations:
  • Place each ball in a small baking cup before serving.
  • Other Nuts: Substitute pecans, walnuts, pistachios, cashews, or peanuts for the almonds.
  • Other Dried Fruit: Substitute dried fruits such as cranberries, cherries, apricots, blueberries, or pineapple for the raisins and/or dates.
  • Omit coconut and add more nuts instead.
  • Roll balls in ground almonds, walnuts, pecans, carob, or cocoa powder instead of coconut.
  • Nut-Free: Substitute sunflower seeds or pumpkin seeds, or a combination for the almonds.
  • Treasure Hunt Energy Bars: pat the mixture evenly into an 8-x4½-inch loaf pan (or a similar size.) Cut into small squares. Refrigerate until cold and firm, about 30 minutes.
