I prefer raw almond butter for its milder flavor. But you can use roasted almond butter or cashew butter instead. You can also use peanut butter. For a nut-free alternative, substitute tahini or coconut butter.
Vanilla: Vanilla complements the sweetness of the maple syrup, adding a cozy, warm note that makes the caramel flavor richer, sweeter, and more complex.
Salt: Fine sea salt enhances the flavor of the popcorn. Decrease the salt if using a salted nut butter.

- Air Popper Popcorn: Pop popcorn kernels in an air popper according to the manufacturer’s instructions.
- Whirley Pop Popcorn: Pop popcorn kernels in 2 teaspoons olive oil over medium heat (my favorite.)

- DIY Microwave Popcorn: Place ¼ cup popcorn kernels in a brown paper lunch sack. Fold the top down two times to help hold in steam. Place upright in the microwave and choose the popcorn setting or set it for 2 to 2½ minutes. Stop the microwave when the popping slows to less than one pop per second. Pour onto the prepared baking sheet. Repeat with the remaining ¼ cup of popcorn.
Tips for Vegan Caramel Corn
- Use raw almond butter for a milder flavor.
- To make sure caramel corn is done, remove a few kernels from the oven. Let cool. If they are crispy, they are done.
- If the caramel corn gets soft, place a single layer on a rimmed baking sheet and bake at 300°F for about 5 minutes.
- Vacuum pack caramel corn in mason jars to make sure it stays crispy.

- Nut-Free Vegan Caramel Corn: Substitute tahini or melted coconut butter for almond butter.
- Vegan Peanut Butter Caramel Corn: Substitute peanut butter for almond butter. Decrease salt to ¼ teaspoon if peanut butter is salted. If desired, add ¼ cup roasted shelled peanuts.
- Oil-Free Vegan Caramel Corn: Use an air popper or microwave to pop the kernels.
- Vegan Salted Caramel Corn: Sprinkle with salt before baking.
- Vegan Sesame Caramel Corn: Substitute tahini for almond butter. Stir 2 tablespoons white or black sesame seeds into the maple syrup mixture.

Vegan Caramel Corn
Ingredients
- ½ cup popcorn kernels
- â…“ cup pure maple syrup
- ¼ cup almond butter or cashew butter
- 1 teaspoon vanilla extract
- ½ teaspoon sea salt
Instructions
- Heat oven to 300°F. Line 2 rimmed baking sheets with parchment paper.
- Pop popcorn using the desired method. (You should have 12-14 cups of popped popcorn).
- Spread popcorn out on the prepared baking sheets. Let cool. Remove unpopped kernels.
- Transfer popcorn to a large bowl.
- Stir maple syrup, almond butter, vanilla, and salt together in a liquid measure.
- Pour maple syrup mixture over the popcorn and quickly stir to evenly coat. Hands work the best.
- Transfer to the baking sheets and spread out evenly.
- Bake for 6 minutes.
- Rotate pans and bake for another 5-6 minutes.
- Remove from the oven. Let cool. The caramel corn will crisp up when it cools.
- Transfer to airtight containers.
