If I hadn’t told you in the title, you’d never know that avocado creates the silky base in this favorite comfort food. If desired, garnish with raspberries, sliced strawberries, cherries, or whipped coconut cream.
Place dates in a small saucepan and cover with water. Bring to a boil over high heat. Remove from the heat. If dates are not soft when poked with a fork, let stand until soft, about 5 minutes. Drain.
Cut avocado in half and remove the pit. Scoop the avocado pulp into a blender.
Add milk, softened dates, cocoa powder, vanilla, and salt. Process until very smooth, stopping to scrape down the sides as needed.
Add additional milk or date soaking liquid a tablespoon at a time as needed to achieve a thick, smooth pudding consistency.
Taste for sweetness. If desired, add monk fruit, stevia, or maple syrup to taste.
Spoon into individual serving dishes or a serving bowl. If time allows, refrigerate for 1 hour. Keeps in the refrigerator for 3 days.
